Serves 2
- 1 lb (450g) fresh calamari rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika (optional)
- 1 cup cold sparkling water
- Vegetable oil (for frying)
- Lemon wedges (for serving)
- Marinara sauce (for dipping, optional)
Way to cook:
- In a large bowl, combine flour, cornstarch, salt, pepper, and paprika. Gradually add the sparkling water, stirring until the mixture is smooth.
- Heat vegetable oil in a deep skillet over medium-high heat to 350°F (175°C).
- Dip calamari rings into the batter, shake off excess, and carefully drop them into the hot oil. Fry in small batches for 2-3 minutes or until golden brown.
- Remove the calamari and place it on a paper towel-lined plate to drain. Serve hot with lemon wedges and marinara sauce for dipping, if desired.
